These are the best crockpot freezer meals I’ve thrown together.

Some are so good I make and freeze double batches- that’s 30 meals, a whole month, ready in less than 3 hours!

1. Texas Roadhouse Pot Roast

  • 2 – 2.5 lb chuck roast
  • 1/2 onion chopped
  • 1/2 bell pepper any color, chopped
  • 2 stalks celery chopped
  • 2 large potatoes chopped into chunks
  • 2 cloves of garlic minced or pressed
  • 1/2 cup tomato sauce
  • 1/2 cup BBQ sauce
  • 2 beef bouillon cubes
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 cup water

This pot roast is a family favorite—it’s hearty, flavorful, and incredibly tender.

I can’t resist a good roast, even in the summer when it’s hot. It’s just that good!

My kids like it over mashed potatoes (they make mountains and meat lakes), and it’s gone in no time.

2. Slow Cooker Chicken Pot Pie

  • 2 Boneless Skinless Chicken breasts
  • 1 cup water
  • 1/2 bag of frozen mixed vegetables
  • 1 Tbsp parsley
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 tsp minced garlic
  • 2 chicken bouillon cubes
  • 1/2 tsp salt
  • 4 Tbsp butter
  • 4 Tbsp flour
  • 1 cup milk preferably whole milk
  • 1 package of biscuits

Making Slow Cooker Chicken Pot Pie for the freezer means we always have our coziest go-to meal on hand when we want it.

I love that there’s no chopping needed—just toss in chicken, frozen veggies, and a few pantry staples for a creamy, hearty dinner.

3. Slow Cooker Korean Beef Tacos

Ingredients

  • 2-3 lbs. Beef Chuck Roast
  • 1/3 cup honey or brown sugar
  • 1/4 cup soy sauce
  • 1/2 onion diced
  • 5 cloves garlic minced or pressed
  • 1 Tbsp rice vinegar (seasoned or not) white wine vinegar will do
  • 1 Tbsp fresh ginger grated or minced (or 1 tsp ground ginger)
  • 1/2 jalapeno minced (optional)
  • 1 tsp sesame oil
  • 1 tsp red pepper flakes (optional)

Is anyone ready for a new taco taste for Taco Tuesday? The beef is sweet, savory, and a little spicy, which my husband and I enjoy.

The kids love assembling their own tacos with their favorite toppings. Serve with tortillas, shredded lettuce, and a sprinkle of cheese.

4. Spinach and Artichoke Chicken

Ingredients

  • 1 – 1.5 lbs. boneless skinless chicken breasts cut into chunks
  • 1/2 medium onion chopped
  • 5 oz. frozen spinach 1/2 package thawed spinach package – liquid removed
  • 1/2 jar of artichoke hearts rinsed and chopped
  • 4 oz. cream cheese
  • 1/2 cup parmesan cheese
  • 4 oz. sour cream
  • 4 oz. shredded cheddar cheese divided
  • 2 Tbsp butter
  • 1/2 tsp salt

This creamy chicken dish is reminiscent of our favorite dip. It’s a hit with the whole family and pairs well with pasta or rice.

And don’t worry about the green veggies- the cheesy sauce makes this a hit with my daughters, and may be their favorite pasta sauce lately!

5. Apple Cinnamon Pork Loin

Ingredients

  • 2 – 2.5 lbs pork loin
  • 2 apples peeled and sliced
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cinnamon
  • 1/2 onion sliced
  • 1/2 cup maple syrup

This pork loin is perfect for fall if you like the classic pork and applesauce flavor.

The apples and cinnamon create a sweet and savory combination that my family loves. Serve with roasted potatoes and green beans.

6. Slow Cooker Mongolian Beef

Ingredients

  • 2 lbs. pot roast or chuck roast trimmed of excess fat.
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 1/2 cup dark brown sugar
  • 3 cloves garlic minced or pressed
  • 2 tsp of minced ginger or 1/2 tsp ground ginger
  • 4 green onions sliced into 2-inches pieces
  • 1 Tbsp soy sauce
  • 1 Tbsp olive oil
  • 2 Tbsp cornstarch
  • 1 Tsp crushed red pepper flakes (optional)

This Slow Cooker Mongolian Beef is my go-to when I’m craving that sweet-and-savory flavor without the hassle of takeout.

It combines tender chuck roast with a rich sauce made from dark brown sugar, soy sauce, garlic, and ginger.

I love that it’s a true dump-and-go meal—no searing or browning required.

7. Best Slow Cooker Chili

  • 1 lbs. lean ground beef or turkey
  • 1/2 can of red kidney beans rinsed (15 oz)
  • 1/2 can crushed or diced tomatoes 28 oz (or tomato sauce)
  • 1/2 can of water 28 oz
  • 1/2 large onion minced
  • 1 cloves of garlic minced or pressed
  • 1 Tbsp chili powder
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin
  • 1/4 tsp cinnamon
  • 1/4 tsp cayenne pepper optional – depends on how spicy you want it
  • 2 tsp red wine vinegar
  • 1/2 tsp Worcestershire sauce
  • 1 tsp chocolate chips or cocoa powder
  • sour cream optional topping
  • shredded cheese optional topping

This Crockpot Chili is a hearty, flavor-packed meal that’s perfect for busy weeknights. Made with all the fixins’ and a blend of spices, it delivers a rich, comforting taste without any pre-cooking required.

My family loves it topped with shredded cheese and sour cream, and it’s even better the next day—or piled onto chili dogs, which is my son’s absolute favorite!

  • 2 – 2.5 lbs. boneless pork loin
  • 1/2 onion sliced
  • 1 Tbsp paprika
  • 1 tsp black pepper
  • 2 tsp salt
  • 1/2 16 oz. bottle BBQ sauce
  • 2 cloves garlic minced or pressed
  • 1/2 cup water
  • hamburger buns for serving

Slow Cooker Pulled Pork is a meal I keep coming back to when I want summer taste year-round. The seasoning is simple but gives the pork so much flavor, and it practically falls apart after slow cooking all day.

We usually pile it onto buns with coleslaw for a quick dinner, but I’ve also used it for tacos, nachos, and even freezer-friendly quesadillas. It’s a total mom-win when one batch turns into multiple meals!

9. Ropa Vieja

Ingredients

  • 1.5 lbs of skirt steak flank steak, or top sirloin
  • 1 onion sliced
  • 1 carrot sliced into chunks
  • 1/2 bag mini sweet peppers or 1 red or orange bell pepper sliced into strips
  • 6 cloves garlic minced or pressed
  • 1 tsp salt
  • 1 tsp ground cumin
  • 2 beef bullion cubes
  • 1/2 cup water
  • 2 cans tomato sauce 8 oz. each
  • 2 tsp oregano
  • 1 tsp black pepper
  • 2/3 cup frozen peas
  • 1/2 can tomato paste optional, for thickness

This Cuban-inspired dish is packed with flavor. The shredded beef, peppers, and onions create a delicious combination that my family loves.

It’s something a little different for dinner, but still goes great in tortillas!

10. Slow Cooker Chicken Tacos

Ingredients

  • 2-3 boneless skinless chicken breasts
  • 1 Tbsp chili powder
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 bouillon cube
  • 1/2 cup water

Chicken tacos are a classic, and the meat has more flavor when it’s cooked low and slow in the crockpot.

Get some soft tortillas, plenty of lettuce, cheese, guac, and more toppings, and you have a simple dinner that didn’t take standing over a stove.

  • 2 – 2.5 lbs. baby back pork ribs
  • 1/2 onion sliced
  • 1 Tbsp paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 16 oz. bottle BBQ sauce
  • 2 cloves garlic minced or pressed; or 2 tsp garlic powder
  • 1/2 cup water
  • 2 tbs brown sugar optional (sweeter version)

These ribs are fall-off-the-bone tender, and I think it’s just as good as grilled ribs.

My husband says they’re better than any restaurant ribs, and I’ll take the compliment! I serve with baked beans and cornbread, or sometimes air fryer “baked” potatoes.

12. Slow Cooker Paprika BBQ Chicken

Ingredients

  • 6 boneless skinless chicken thighs
  • 1/4 tsp onion powder
  • 1/4 tsp chili powder
  • salt and pepper
  • 2 cloves garlic minced or pressed (or 2 tsp minced jarred garlic)
  • 1/2 onion diced
  • 2 chicken bouillon cubes (swap bouillion and water with 3/4 cups of chicken broth)
  • 3/4 cup water
  • 1/4 cup paprika
  • 1/2 cup tomato sauce
  • 1/2 cup BBQ sauce
  • 1 cup sour cream  

Have you ever tried paprika chicken before? This BBQ spin-off is packed with even more flavor, made juicier in the crockpot.

The paprika adds a nice warmth and richness to the sauce, and the kids love it over egg noodles.

13. Slow Cooker Honey Garlic Chicken

  • 1 – 1.5 lbs. boneless skinless chicken breast
  • 1/2 onion chopped
  • 3 Tbsp soy sauce
  • 3 Tbsp honey
  • 2 Tbsp water
  • 1.5 tsp fresh ginger or 1/2 tsp ground ginger
  • 3 cloves of garlic pressed or minced
  • A pinch of crushed red pepper flakes or 1 tsp if you like it spicy

Shredded honey garlic chicken is a hit in our house, great over rice, in rice bowls, or for quesadillas on “taco Tuesday.”

The sauce is what really makes it tasty, and we drizzle it over everything hot out of the crockpot.

14. BBQ Meatloaf

  • 1 lb ground beef
  • 1/2 lb Italian sausage loose or removed from casing
  • 1/2 onion finely chopped
  • 1/2 red bell pepper (or any color) finely chopped
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 2 cloves garlic minced or pressed
  • 1/2 cup BBQ sauce
  • 1/2 cup canned tomato sauce
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tsp chili powder
  • 1/2 tsp cumin

This meatloaf is a fun twist on a classic. The BBQ sauce adds a tangy flavor that my kids enjoy.

It’s unbelievable how well the BBQ taste soaks into the meatloaf, and it feels like I have a summer meal coming out of the crockpot.

15. Citrus Caribbean Chicken

  • 3-4 lbs chicken legs and thighs skin removed
  • 3 Tbsp orange juice concentrate
  • 1 Tbsp lime juice or lemon juice
  • 2 cloves garlic minced or pressed
  • 1/2 onion sliced
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp cumin
  • 1 tsp oregano
  • 1 tsp dried cilantro or 1 Tbsp fresh cilantro

The flavors are bright, sweet, and just a little tangy thanks to the pineapple and orange juice—my girls always say it smells like vacation while it’s cooking.
