It’s a familiar scene—it’s a hot summer afternoon, and you’re trying to figure out what to serve alongside your grilled main dish.

These Grilled Red Potatoes are the PERFECT side dish for your summer meal if you want something quick and easy.

Just make sure that you make enough because they will go FAST!

I’ve always enjoyed cooking potatoes on the grill. They’re a great side dish, and in the summer heat, I’m happy to skip using the oven for potatoes!

Grilled Red Potatoes Recipe: Best Summer Side

I love making these grilled red potatoes when summer rolls around. They’re easy, they’re tasty, and best of all, they keep the heat out of the kitchen.

Whenever I’m planning a meal on the grill, I know these are the perfect side that everyone will reach for.

I start by selecting a few red potatoes from the batch I picked up at the store. My red potatoes were pretty large, so I used 4 to have enough for my family of 4.

You would want to grab more if you’ve got smaller potatoes, maybe 6-8 for a family of 4 yourself.

 The trick to speeding up the cooking process is to give them a quick zap in the microwave first. I pop them in for about 4 to 7 minutes, depending on their size.

Smaller potatoes will take about 4 minutes, but larger potatoes will take up to 7. I look for them to be easier to stab with a fork but not totally cooked through just yet.

After microwaving, I let them cool down a bit because slicing them while they’re still hot is no fun.

Once they’re cool enough to handle, slice them into medallions about 3/8 of an inch thick. (Yes I eyeball this, and so can you! Just be sure it’s thick enough that the tongs won’t crush them on the grill.)

3/8 of an inch is perfect because they’ll cook evenly on the grill and get those beautiful crispy edges that everyone loves.

I drizzle them with olive oil, ensuring every slice is coated evenly, then sprinkle with a little salt and pepper.

Of course, you can always get creative with your seasonings—sometimes, I add garlic powder or smoked paprika or maybe Italian seasoning, depending on my mood or if I think a seasoning will match our main entree best.

Next comes the fun part—let’s grill potatoes! With the grill already preheated, I lay the potato medallions directly on the grate.

You can grill these potatoes in foil if you want, but I like getting that real grill flavor on these bad boys! If you do, get a heavy-duty foil that’s better for grilling so it doesn’t rip and get stuck to the grill or potatoes.

I grill them on each side for about four minutes, flipping once they’ve got a nice crispy edge. They turn out golden, a little smoky, and so irresistible.

Before I know it, they’re ready to serve, and I have to make sure I’ve made enough because my family can never get enough of them. 

Serve and watch your guests or family devour them! There’s something about crispy grilled potatoes that just makes summer dinners feel complete.

Ingredients

  • 4 Large red potatoes or 6-8 small red potatoes
  • 3 Tbsp olive oil
  • Salt
  • Pepper

Instructions

  • Microwave potatoes - 4 minutes for small, 7 minutes for large.
    Let them cool for 5 minutes before removing them from the microwave.
  • Slice the mircrowave potatoes into medallions, about 3/8" thick.
  • Coat the potato slices with olive oil.
  • Add salt and pepper to both sides of each potato medallion (to your liking, and feel free to add other seasonings if you'd like).
  • Preheat your grill to high.
  • Grill the potatoes, about 4 minutes per side.

Can I prepare the potatoes ahead of time?

Yes, you can! If you’re pressed for time, you can microwave and slice the potatoes earlier in the day. Just store them in an airtight container in the fridge, and when you’re ready to grill, toss them in oil and seasonings.

Before grilling them, could I boil my potatoes instead of microwaving them?

Yes, boiling is a great alternative if you prefer not to microwave. Parboil the potatoes for about 10 minutes, just until they’re fork-tender but still firm enough to slice and grill without falling apart.

If I skip microwaving the potatoes, how long will the potato medallions take to grill?

If you skip the microwaving or parboiling steps and go straight to grilling raw potato slices, they will take longer to cook.

For medallions, they’ll be smaller than cooking the whole potato, but it can still take 15-20 minutes for these potatoes to cook through all the way.

How can I make my grilled potatoes extra crispy?

To achieve maximum crispiness, make sure your grill is hot before placing the potatoes on it, and don’t be shy with the olive oil.

If you really want to boost the crispiness, try brushing the potatoes with a little melted butter before grilling.

Can I grill using different potatoes?

While red potatoes are great for grilling because they hold their shape well, you can also use Yukon Golds, baby potatoes, or russet potatoes.

Just adjust the cooking time slightly based on their size and how you cut them up.

What can I do with leftover grilled potatoes?

It doesn’t happen much on my end, but leftover grilled potatoes are versatile!

You can reheat them and toss them into a breakfast hash, add them to a frittata, or use them in a potato salad for a smoky, grilled flavor.

In the heat of summer, making easy, delicious sides doesn’t have to be complicated. I’m happy to be outside grilling if it doesn’t take too long, and it’s much better than heating the house up with the oven!
