We all know how well brie cheese pairs so well with the sweetness of a fruit like raspberries.
Add a rich, juicy beef burger and some salty, crispy bacon, and you’ll be one cold beer short of heaven.
To start the perfect bacon cheeseburger, let’s prepare the patties for our juicy burgers before we cook up the toppings.
Grab a chunk of ground beef (or ground chuck, whatever you prefer), measure it by weight, anywhere between 1/4 and 1/2 pounds, and then carefully form it into a large disc.
Make it a bit larger diameter-wise than you want it to be when it’s done since it will shrink.
But we won’t be grilling those burgers quite yet—now, we need to prepare the toppings!
I cooked the bacon and raspberry topping in two pans at medium-high heat at the same time so the onions had time to caramelize while the bacon was fried.
First, prep the yellow onions- cut into thin slices to get them ready for the pan. Then get out 2 large pans to get cooking.
In one pan, start melting butter, as you see below—that’ll be for the raspberry and onions.
In the other pan, it’s time to start frying the bacon- preferably until it’s crispy, but you do you!
When the butter is fully melted, add the onions, salt, and freshly ground black pepper, and reduce the heat to low. Cook them for a few minutes until golden brown, about 10 minutes.
Then reduce the heat to low, add the raspberry preserves, and cook for another 10 minutes. Set aside once done.
Now it’s burger cooking time!
Get your grill nice and hot; while it’s heating up, liberally season with salt and black pepper on both sides of the burger patties, and then throw them on the grill to cook for about 5 minutes.
After 5 minutes, they’re about halfway done cooking, so flip them, add the brie cheese and bacon on top, and cook until the cheese is gooey and melty.
During this time, I added the burger buns- I love a good toasted bun when we do burgers, and doing them on the grill is fast and easy.
Burger buns toast up in only 2 minutes or so while the burgers cook with the cheese, so in no time, they’re ready.
Once the burger patties are done (165 degrees in the middle to be safe… but medium never bothers me), place them directly on the bottom bun.
