In a small saucepan, heat the apples, lemon juice, ¼ tsp cinnamon, and brown sugar; keep it on the heat until it's boiling and the apples start to release some liquid.
In a small dish mix together the water and cornstarch and add to apples.
Continue to heat until the sauce has thickened.
Heat your oven to 400 degrees.
Spread out your tortilla wedges on a greased baking sheet.
In a small dish, combine the sugar and remaining cinnamon.
Brush each apple wedge with butter and then sprinkle with cinnamon sugar.
Bake for 5-8 minutes or until chips are golden brown.
Notes
* You can serve your “salsa” warm or cold. I thought it was amazing warm with the chips.
