Let’s be honest—when you’ve had a long day juggling work, errands, and kids who suddenly “hate chicken,” the last thing you want to do is spend an hour cooking. 

Most nights, I just need something fast, easy, and guaranteed to be eaten without drama.

Over the years, I’ve stashed a running list of go-to dinners in my bookmarks that checked all the best boxes- minimal prep, chopping, and my kiddos are happy to eat them time after time.

I found this recipe watching Reels, and it’s simple in every way.

I toss the chicken tenders, sausage, and veggies in oil and Buffalo Wild Wings sauce, and then chuck it into the oven.

2. Cheesy Quesadillas

Tortillas, shredded cheese, and anything leftover in the fridge. I crisp them up in a pan and slice them like pizza—my girls dip them in salsa or ranch and eat every last bite.

When I have zero energy, spaghettic and meatballs are the classic lazy dinner we can all agree on.

I toss meatballs in the slow cooker- then boil the noodles, add butter and shredded parm, and that’s it. It’s simple comfort food that always gets eaten.

I think Caesar salad is the best, I’m happy to find new ways to serve it up for dinner. I grab a rotisserie chicken and a bag of Caesar salad, wrap it all up in tortillas, and dinner is ready.

Creamy, cheesy, and made in one pot so I’m not stuck doing dishes after we eat up. We’ll add in some broccoli, chunks of ham and peas, hot dogs, or whatever else- I let our kiddos pick if they want to make it special with something extra or not.

We coat chicken strips in breadcrumbs and bake them until crispy. They taste like nuggets but less oily, and I aim to make a double batch to freeze extras.

Make Tuesday into a taco party and let everyone build up their favorite taco bowl. I grab chicken because it’s juicy in the Instant Pot, but you can use any meat you have laying around or grab on sale.
