I’m trying to lose some weight and bulk up a bit this summer, so I want to eat a lot of vegetables and proteins.
For me, that means one thing- plenty of salads! But, I’ve been having some issues because I couldn’t find a low fat salad dressing I like from the store that’s worth the cost.
Any fat-free salad dressing I got was disappointing, and the low-fat ones were meh!
When in doubt, I’m going to try and make it myself. I love this lemon bruschetta low fat salad dressing I made, so I thought I should share it with you guys.
Homemade Lemon Bruschetta Low Fat Salad Dressing
I whipped together this homemade dressing in minutes and it was SO good! It’s the best healthy salad dressing I’ve made.
I would highly recommend trying it – It has only simple ingredients (that you can pronounce) and costs me only $1 to make!
I had most of the ingredients at home for general cooking anyways, so may as well make an easy dressing out of it!
Pop it all into a blender or food processor, and it’s mixed in seconds, and ready for your salad.
This would also be a great marinade for chicken – I would put this marinade on chicken thighs or pork loin and let it sit refrigerated overnight.
Then you can grill or cook it the next day for dinner!

Homemade Lemon Bruschetta Salad Dressing Recipe
Ingredients
- ½ cup olive oil
- Fresh Lemon Juice from 1 lemon
- 2 cloves garlic I pressed mine in my garlic press
- ½ tsp paprika
- 1 tbsp dried thyme
- 1 tsp salt
- 1 packet of stevia
- 1 tsbp dried tarragon
- 1 large tomato

- Put all ingredients into food processor and blend for 30 seconds.
