With the kids just finishing up their first full week back at school, I wanted to make them a special dinner and this one fit the bill perfectly. I’ve tried a couple different recipes for Chicken Cordon Bleu. But this time, I tried something different – I used crushed Honey Nut Cheerios as the breading, and it turned out AMAZING! The sweetness of the breading and the slight sweetness of the honey works so well for this dish.

To get the ingredients, I took my 3 year-old daughter Kaylee with me. She was having a rough day and needed some quality one-on-one time. So what better way to cheer her up than to go to my local Price Chopper Supermarket to let her use the kid-sized “shopper-in-training” cart? We had so much fun together, and she felt like a big girl helping me out.

We also had to pick up some Hillshire Farm Naturals Ham (which by the way was the BEST packaged ham we have had, EVER!)

Here are my ingredients… and now to show you how it’s done! Before I began preparing the chicken, I got my ‘breadcrumbs’ ready by using a food processor to crush up the Cheerios. For the chicken, I used 2 large breasts. Cut each them in half lengthwise into 2 equal sized pieces for a total of 4.

Then, pound them really thin (but be careful not to tear the meat); I pounded them to about 1/4 of an inch. Next, top with a slice and a half of swiss cheese, followed by two slices of Ham. I used Hillshire Farms Naturals Honey-Roasted Ham, and it turned out great.

Then carefully roll the chicken and hold with a toothpick.

Breaded Chicken

Time to bread them! I always use a 3-step coating of flour, egg, and breadcrumbs to make sure that the coating is even and sticks well while cooking. Roll each piece of chicken in the flour, then the egg and then the crushed Cheerios. Then let them sit in the fridge for at least 45 minutes.

In a skillet over medium heat, melt some butter, and once it’s nice and bubbly, place each piece of breaded chicken in the butter. Cook each side of the chicken for about one minute to get a nice brown crust. Then place in the oven for 20-25 minutes or until done.

This Honey-Crusted Chicken Cordon Bleu uses crushed Honey Nut Cheeorios for the breading! You NEED to try this twist on a classic chicken dish!

Ingredients

  • 2 large boneless skinless chicken breasts
  • 2 cups Honey Nut Cheerios ground or crushed
  • 1/2 cup flour
  • 2 eggs beaten
  • 6 deli-sized slices of swiss cheese
  • 4 large slices or 8 small slices of ham
  • 2 Tbsp butter
  • salt and pepper

Instructions

  • Crush or grind the Cheerios finely. Tip - use a food processor.
  • Cut each chicken breast in half lengthwise into 2 equal sized pieces for a total of 4.
  • Pound them to about 1/4 inch thick (but be careful not to tear the meat)
  • Season chicken with salt and pepper.
  • Top each piece of chicken with a slice and a half of swiss cheese, followed by one or two slices of Ham.
  • Using 3 dishes (one for flour, one for the eggs, and one for the crushed Cheerios), roll the chicken in flour, then coat the chicken in the beaten egg, covering completely. Finally, coat all sides of the chicken in the crushed Cheerios.
  • Let the chicken sit in the fridge for at 45 minutes (optional).
  • In a skillet over medium heat, melt some butter, and once it's nice and bubbly, place each piece of breaded chicken in the butter.
  • Cook each side of the chicken for about one minute to get a nice brown crust.
  • Bake in the oven for 20-25 minutes or until done.
